Topping:
2/3cupquick oats
2/3cupall-purpose flour
2/3cupcoconut sugar
1/4teaspoonkosher salt
1/2teaspoonground cinnamon
1/2cupcoconut oilmelted
vanilla yogurt ice creamoptional, for serving
Instructions
Preheat the oven to 350°F.
To make the filling:
In a large bowl, add 1 tablespoon orange zest, 1/2 cup honey, and 2 tablespoons cornstarch and whisk until combined. Stir in the 6 cups frozen mixed berries. It will be difficult to mix well because the honey will quickly harden in contact with the frozen berries. That's ok; we will mix it well later on.
Transfer to the baking dish and bake for 12-15 minutes.
Meanwhile, make the topping:
Combine all the topping ingredients in a mixing bowl (2/3 cup quick oats, 2/3 cup all-purpose flour, 2/3 cup coconut sugar, 1/4 teaspoon kosher salt, 1/2 teaspoon ground cinnamon, and 1/2 cup coconut oil) With your clean hands, mix thoroughly between your fingers to create a texture similar to wet sand.
Remove the dish from the oven, stir the berry mix well, then sprinkle the topping over.
Return to the oven and bake for 35-40 minutes, or until the top is golden and the berry sauce is bubbly.
Serve with vanilla yogurt ice cream or yogurt. Enjoy.
Notes
Serve warm with froyo or vanilla ice cream, if desired.
You may use any other frozen fruits of your choice.
