Low Carb Zucchini Pizza Boats
This healthier take on pizza is made in under 30 minutes. They are a delicious, low-carb dinner idea that is family friendly and so easy to make.

Ingredients

zucchini

olive oil

garlic salt
or more to taste

marinara or pizza sauce

cup
shredded mozzarella cheese
1/3
cup
sliced mini pepperoni
or turkey pepperoni
Instructions
Preheat your oven to 400F and line a baking sheet with parchment paper.
Cut zucchini into half lengthwise and scrape out the insides with a small spoon. Arrange the zucchini cut side up into the prepared baking sheet.
Drizzle with olive oil and season with garlic salt and pepper.
Spoon marinara/pizza sauce into each zucchini then top with shredded mozzarella and pepperoni.
Bake for 15-18 minutes, or until zucchini are fork tender and cheese is bubbly.
Garnish with fresh chopped parsley if desired and enjoy!
Notes
Shred your own cheese if you can
Don't feel like you are bound to mozzarella cheese, you can use any type of cheese for your pizza boats.
Finely dice some red or yellow bell pepper and sprinkle them on top of your zucchini pizza boats for more veggie goodness!
Top with some fresh herbs like basil for extra herby flavors.
Feel free to top with your favorite pizza toppings to change things up such as red onions, mushrooms, olives, sausage, pineapple, ham, and more.
Store leftovers in an airtight container for 3-4 days. Do not freeze
